- Mushroom risotto made with crimini, portobello and dried porcini mushrooms. The liquid from rehydrating the porcinis went into the vegetable stock. This is my best vegetarian dish, though I would have to lose the parmasagne cheese to make it vegan.
- Sauteed lamb medallions with rosemary. An old stand-by of ours that we haven't had in a while.
- Aparagus
- Carrots
So, with the salad added in, it's healthy, and very tasty.
